Depends on the quality of the quartzite and the opinion of who you are asking.
It's a form of quartz, so it can be polished.

Thanks Joe. This stuff is really pretty - pink and lavender and seems to be really high quality, hard, and the grains are ..glassy? Don't know what the term is. I have found pieces that have been worked, so it seems if it would hold their intended shape, it should polish. We will see. Waiting for it to warm up to start working in the garage.

And please show us the results.  I have a bit of quartzite from Bull Run Mountain, VA, that has subtle color and a rather glassy sheen in its natural state.  A nearby outcrop joints naturally and was quarried for building stone.

Will do Tim. Maybe you can post a pic of your quartzite for comparison too.
This stuff occasionally has a fossil in it with concentric circles, so I am hoping that would show up in a polished stone as well. Will see.

I know the Graves Mnt. quartzite can be polished, although not as shiny as solid quartz can polish, it can get a decent shine.
