Chicken of the Woods

I found this big chicken of the woods in a sunny patch of Japanese stiltgrass on my hike in to look for beryl crystals in Maryland yesterday. Not 5 minutes after I spotted this mushroom sticking out like a sore thumb I saw a beautiful polyphemus moth fly right by me.

I found some excellent tapered green and golden beryl crystals, too, so all-in-all it was a very good day spent indulging in my three hobbies mineral collecting, lepidoptery, and forageable mycology.

We made a wild mushroom and pea risotto with homemade chicken stock. Despite its size this is the most flavorful and tender chicken of the woods I have found.

Tonight we are making a cream-based wild mushroom soup!
